Two things I would really like your view on:
How to deal with “drug pushing” Dr. (especially when there is a long wait and/or “not accepting blah insurance” for any alternative Dr’s) I don’t want to feel like I’d be Dr shopping either.

I wish I had a solution for dealing with pill pushing doctors, but I don’t. They are who they are. All I can encourage is for people to find a doctor that they feel can best help them.
As for bipolar disorder and eating disorders, I have read some research on it. I have worked with clients who experience both as a dual diagnosis. It is common for people with bipolar disorder to have dual diagnoses.
